My personal opinion on this :
In general simuls are great for beginning chess players to have a chance to draw or lose against much higher rated players.
Many years ago I played in a clock simul against an IM. I had done some opening preparation, the Polgar gambit (as I call it), and after he played passive I sac-ed a piece, and after a king walk I had a draw by repeating the same position. The IM looked at me with a grumpy face (That particular IM is notorious for his grumpy moments), and said to me : "You have nothing".
But I was delighted with my very quick sac draw in the simul and the price I got for finishing as the first in the simul. It's a happy memory and an inspiration to go improving my chess.
However, currently I much prefer to play in tourneys. I'm not very interested in joining otb or online simuls myself anymore.
It is very nice that Lichess has the simul option, but months ago I noticed several times that I had to wait very long to get 4 players to join the simul, when I wanted to give a simul. And my ratings are not that low on average.
Several players might be busy in tourneys or regular games, and some players might not be that interested in joining simuls.
I am sure that several low rated players would join your simul if they would notice, and have some spare time.
